RISE UP with Cowboy Caviar – a much healthier alternative to creamy dips and greasy snacks that are synonymous with Superbowl Sunday.
Ingredients:
2-15 oz. cans black beans (rinsed)
1-17 oz. can whole kernel corn
(drained)
2 large tomatoes (chopped)
1 large avocado (diced)
½ red onion (chopped)
¼ cup chopped fresh cilantro
Dressing:
1 tbsp. red wine vinegar
1 clove garlic
1/8 tsp. cumin
3-4 tbsp. lime juice
2 tbsp. olive oil
1 tsp. salt
½ tsp. pepper
Directions:
Combine all ingredients in bowl, cover and chill, and garnish with avocado slices or cilantro sprigs.
Nutritional Information: (½ cup = ½ cup veggies, ¼ cup carbs, 1 tbsp. fat)
Serve this with pita chips and enjoy!
