I made this amazing Quinoa Brussels Sprouts Salad this weekend and wanted to share! It is a “warm salad” although the leftovers were delicious cold. The colors are beautiful and it is a nice alternative to a leafy green salad for Thanksgiving dinner.
To save on time, use a bag of shredded Brussels Sprouts. The dressing recipe makes a ton so you can easily cut it in half and still have leftover dressing. Honestly, it doesn’t need much dressing at all. Enjoy!
